These cupcakes get their rich dark color from coconut sugar and they are moist, light and fluffy due to cake flour. They are perfect on their own but the sweet chai butter makes them a little more decadent.

Save this one for later!

INGREDIENTS (Makes 10)

1 cup @originenaturals coconut sugar
1/2 cup coconut oil, melted
1/2 cup unsweetened applesauce
1 tsp @originenaturals vanilla
1 cup + 2 Tbsp @swansdowncakeflour cake flour (or 1 cup all purpose flour)
1/2 tsp salt
1-1/2 tsp @originenaturals ground cinnamon
1/2 tsp baking soda
1-1/2 cups grated zucchini (remove seeds before grating)

DIRECTIONS
1. Preheat oven to 350 degrees.
2. Line a 12-cup muffin tin with 10 cupcake liners.
3. Combine the coconut oil and coconut sugar and blend well. Mixture will appear coarse and dry, which is normal. Add applesauce to oil/sugar mixture and stir well. Add vanilla and stir to incorporate.
4. Combine dry ingredients in another bowl. Whisk dry ingredients into wet ingredients until thoroughly incorporated.
5. Fold zucchini into batter. Divide batter evenly into 10 cupcake tins. Bake at 350 degrees for 25-30 minutes or until toothpick inserted in cake comes out clean.
6. Top with Sweet Chai Butter if desired, or enjoy as is.

Sweet Chai Butter
1/3 cup plant butter, softened (I used @countrycrock Plant Butter with Olive Oil)
2 Tbsp @originenaturals coconut sugar
1/2 to 1 tsp chai spice, to taste (See Note)

Mix all ingredients together until well blended. Taste and add additional spice or sugar if desired. Let sit about 20 minutes. Stir again before using. Spread on cupcakes or pipe through pastry bag.

These gluten free cookies taste like softer, chewier almond biscotti with chocolate!

(Swipe to see my first time stacking! Although no one stacks cookies and baked desserts as well as @itsmequincyb)!

The original recipe by @detoxinista calls for vanilla but I’m out so I just substituted almond extract. Since almond flour is the base the almond flavor works just fine. I also made a mistake and used baking powder instead of baking soda but they still turned out amazing.

The base cookie recipe is also refined sugar free as well as dairy and egg free. My non-plant-based family LOVED them!

Here’s the modified recipe:

INGREDIENTS
2 cups blanched almond flour (or almond meal)
1/4 cup melted coconut oil
1/4 cup maple syrup (room temperature)
1/4 teaspoon sea salt
1/2 teaspoon baking powder
1/2 teaspoon almond extract
1 teaspoon apple cider vinegar
1/2 cup dark chocolate chips (I used @enjoylifefoods semisweet mega chocolate chunks)

INSTRUCTIONS
1. Preheat the oven to 250ºF and line a large baking sheet with parchment paper.
2. In a large bowl, combine the almond flour, oil, maple syrup, salt, baking powder, almond extract, and vinegar and stir well to create a uniform, sticky dough. Fold in the chocolate chips.
3. Use heaping tablespoons of dough and roll in your hands to form a ball then flatten to desired size and shape and place onto the baking sheet. (They won't spread a lot with baking.)
4. Bake until the cookies are firm to the touch around the edges, about 30 minutes at 250ºF. For a more crispy and crunchy cookie, you can bake them up to 45 minutes. Due to the low temperature, the cookies will be paler in color despite the longer cooking time.
5. Remove the cookies from the oven and let them cool on the pan for at least 10 minutes removing them. They will firm up more as they cool. Serve warm or at room temperature. The cookies can be stored at room temperature for up to 3 days, but they will have the best shelf life and texture when stored in an airtight container in the fridge or freezer.

They are super easy and can be made ahead so be sure to save this recipe for later! 😋😋

What’s YOUR favorite cake flavor?

I love carrot cake and I love that it’s easy to make it vegan. And thanks to the recommendation from @lifebetweentravel I used @kitehillfoods vegan cream cheese to make the frosting and it’s absolutely delicious!

I’ve got to tweak my recipe a bit. I substituted 1:1 applesauce for the oil in my original recipe and 1:1 flax eggs for regular eggs but I think that’s too much moisture and it made the cake a bit dense. But still very tasty! It was great with oil and flax egg but I’m trying to use as little oil as possible in meals.

Here’s the modified recipe.

Makes one single layer 8-inch cake.

INGREDIENTS
1/2 cup applesauce
1 cup organic cane sugar
1 flax egg (1 Tbsp ground flax seed dissolved in 3 Tbsp water for 5 minutes)
1/2 tsp vanilla
1 cup all purpose flour
1/2 tsp salt
1/2 tsp baking soda
1-1/2 tsp ground cinnamon
1-1/2 cups grated carrots

INSTRUCTIONS
⭐️ Preheat oven to 350 degrees F. Spray an 8” round cake pan with oil and line with a circle of parchment.
⭐️ Combine the applesauce and sugar. Lightly beat the flax egg into the applesauce/sugar mixture. Add vanilla. Combine the remaining dry ingredients in another bowl. Whisk dry ingredients into the wet ingredients until thoroughly incorporated. Fold carrots into batter. Bake for 40 minutes or until toothpick inserted in cake comes out clean. Frost with cream cheese frosting.

For the frosting mix 1 stick (4 oz) vegan butter (I used Country Crock Plant Butter with Olive Oil) with 8 oz @kitehillfoods plain cream cheese, 1 tsp vanilla and 1-2 tsp cinnamon. Whip on high in a mixer until smooth and blended. Add in 3-4 cups organic powdered sugar, 1/2 cup at a time to reach desired spreading consistency.

Vegan Meringues, Take 2 🎬

I made the necessary corrections to my vegan meringue recipe and these came out almost perfect!

So here are the key tips: 1. You have to use cream of tartar as a stabilizer. I didn’t have any the first time so I subbed lemon juice but it didn’t work the same. 2. Don’t overbeat your meringue. Even with a stabilizer it’s possible to overbeat which will break it down and make it less firm. 3. Flavor with almond extract instead of vanilla. Vanilla casts a brown tint. 4. Most important, lower the temp. My first set were baked at 250 degrees. I baked these at 210 degrees for about two hours then turned off the oven and let them stay in another hour. Lowering the temp also helped the color from washing out (believe it or not, the first batch were white, pink and purple). These were light, delicate, crunchy and flavorful. I love almond flavor but you can use any extract of choice, just make sure it’s clear.
